Ingredients - Makes 20 cookies
- 2 cups 1.1 GF Flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 cup of butter
- 1/2 tsp kosher salt
- 3/4 cup cocoa powder
- 1 cup mini chocolate chips
- 3/4 cup brown sugar
- 3/4 cup sugar
- 1 tsp vanilla extract
- 1 tsp coconut extract
- 3.5oz RIND Dark Cocoa Sea Salt Coconut Crisps
Preheat the oven to 350 degrees and line two cookie sheets with parchment paper. In a mixing bowl add the sugars and butter. Beat for 3 mins on high. Mix in the eggs and extracts. Then add the rest of the ingredients and mix until incorporated. Using a 1 1/2" ice cream scoop, scoop equal size cookies on the cookie sheets. Bake for 9-11 minutes. (9 mins for gooey). Remove, let cook and enjoy!
