Honey Citrus Cupcakes

Ingredients (cupcakes):

  • 1 1/4 cup gf all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup organic cane sugar or granular monkfruit
  • 2 tbsp honey
  • 1/4 cup refined coconut oil, melted and cooled
  • @palermoteacompany honey citrus tea bags steeped in 1 cup boiling water
  • 1 egg room temp
  • 1 tsp vanilla extract
  • 1 packed tbsp orange zest (about 1 medium orange)

Ingredients (vanilla honey buttercream)

  • 1/2 cup grass fed butter
  • 1/2 cup honey
  • 1/4 cup arrowroot starch
  • 2 tsp vanilla

Instructions (cupcakes);

  1. Brew your tea 5-10 min
  2. Whisk dry ingredients
  3. Combine sugar, honey, coconut oil, egg, vanilla, and zest. Then fold into dry
  4. Pour 1/3 cup of finished tea and combined again
  5. Bake 325 for 15 min
  6. Move to cooling rack

Instructions (buttercream):

  1. Use a standing or hand mixer to whip ingredients together until smooth
  2. Pipe onto cupcakes, top with more orange zest, and enjoy!
