Apple Pie Cupcakes

Ingredients (Cupcakes):

  • 1 cup RIND Apple Chips (crushed)
  • 87g all-purpose flour
  • 80g brown sugar
  • Pinch of salt
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 50g avo oil
  • 25g greek yogurt
  • 60g unsweetened applesauce
  • 1 egg
  • 1/2 tbsp vanilla bean paste

Ingredients (Vanilla Cream Cheese Frosting):

  • 113g butter
  • 1 tsp vanilla
  • 4 oz cream cheese
  • 60g powdered sugar
  • 2 tbsp heavy cream
  1. Ingredients (Apple Pie filling):
  • 1 tbsp butter
  • 1 honey crisp apple chopped
  • 20g brown sugar
  • 1 tsp cinnamon
  • 1 tsp cornstarch mixed with 1 tbsp water

Instructions:

  1. Line a muffin tin and spray oil. Preheat oven to 350 f.
  2. In a bowl, add in the oil, egg, apple sauce, greek yogurt and vanilla. Whisk together until smooth.
  3. In a separate bowl, add in the flour, sugar, cinnamon, baking powder and baking soda. Add in the crushed apple chips and mix.
  4. Pour the dry ingredients into the wet ingredients and whisk until smooth and until you see no clumps!
  5. Pour batter into the lined muffin tin and bake for 12-15 minutes!
  6. While the cupcakes are cooling, make the apple pie filling. In a saucepan, add the butter, chopped apples, sugar, cinnamon and cornstarch with water.
  7. Mix on low medium heat until apples are thickened with sauce. Set aside and let it cool.
  8. Make the vanilla cream cheese frosting! Add the softened butter and cream cheese in a bowl. Use a stand mixer to mix until fluffy. Add in the heavy cream and vanilla bean paste.
  9. Add in the powdered sugar and mix until frosting consistency!
  10. Put the frosting in a piping bag and put on top of the cupcakes!
  11. Top with the cooled apple pie filling!
